Chocolate Chip Carrot Cake


A home made carrot cake is always delicious and tasty and smells greatly, but when we add some bitter dark chocolate chips, it is the perfect combination and then it really becomes divine! My firend Rosa Caridade offered me this beautiful cloth and I have to thank her so much for it was the perfect setting for this treat. Ideal for those rainy days that seem to make no truce, drizzle with liquid caramel liquid to taste and then just light a fire, put a good movie on the DVD player and spend a  very cozy late afternoon!



Ingredients:
  • 2 tea cups flour
  • 2 tea cups sugar
  • 4 medium carrots
  • 1 soup spoon yeast
  • 4 eggs room temperature
  • 1/2 tea cup sunflower oil
  • 2 soup spoons of cinammon
Pre-heat the oven 190ºC/ 4 gas

In a bowl mix the flour and the yeast. Beat up the eggs, the sugar, the sunflower oil for about 3 minutes with the mixer and pour over the flour with the yeast. Blend well and add the previouly boiled and mashed carrots. Put the dough in a cake mould lightly greased with butter. Sprinkle the dark chocolate chips.Put it in the oven for about 35 minutes.


Um bolo de cenoura caseiro é sempre delicioso e saboroso e cheira muito bem,, mas quando lhe acrescentamos pepitas de chocolate preto amargo, é a combinação perfeita e, então aí, torna-se divinal! A minha amiga Rosa Caridade ofereceu-me este pano lindíssimo e tenho de lhe agradecer pois foi o cenário perfeito para esta iguaria. Ideal para estes dias chuvosos que parecem não dar tréguas, rega-se com caramelo líquido a gosto e, depois, é só acender a lareira, pôr um bom filme no leitor de DVDs e passar um final de tarde muito aconchegante!

Ingredientes:
  • 2 chávenas de chá de farinha
  • 2 chávenas de chá de açúcar
  • 5 cenouras médias
  • 1 colher de sopa de fermento 
  •  4 ovos em temperatura ambiente
  •  Óleo de girassol 1/2 chávenas de chá
  •  2 colheres de sopa de canela

Pré-aqueça o forno a 190º/ 4 a gás
 

Numa tigela misture a farinha e o fermento. Bata os ovos, o açúcar, o óleo de girassol durante cerca de 3 minutos com a batedeira e despeje sobre a farinha com o fermento. Misture bem e acrescente o puré das cenouras previamente cozidas e misturadas com canela. Coloque a massa numa forma de bolo levemente untada com manteiga. Espalhe por cima as pepitas de chocolate.Vai ao forno  cerca de 35 minutos.
